Montreal Chicken with Summer Salad & Grilled Zuchinni

Grilled Zuchinni

Cut a big zuchinni or 2 small zuchinnis in thick slices.  Sauté the Zuchinni in  hot olive oil.  Add minced garlic and chopped up sun dried tomatoes.  Add pepper and "Herbes de Provences".  YUMMY!  Your kitchen will smell wonderful. Eat this with Montreal Chicken.

Cut a few chicken filets into strips and marinate with "Montreal Chicken".  Sauté the chicken in a pan of hot olive oil.  That's it.  Serve the chicken with the Zuchinni and a salad.   Tada!  Delicious with your favourite red wine!  Enjoy.

Summer Pasta Salad


This is a VERY easy and refreshing pasta salad.  Use any kind of pasta that you have.  Today, I had macaroni.
In a large bowl, put 4 cups of cooked pasta.  Add the following ingredients:

* chopped tomatoes (2 or 3 )
* 3 chopped green onion
* 2 cloves of garlic crushed and minced
* 3 to 4 baby cucumbers (or regular...doesn't matter!)
*  many, many sliced green olives (I love olives!) or black olives
*  chopped green pepper
(Please note that you can add whatever other veggies you prefer - carrots, broccoli, celery, mushrooms....)

MIX......then add the following dressing:

1 cup of mayonnaise
1/4 mustard
salt and pepper

MIX again and voila!  Enjoy with your favourite bread or sandwich.

The Perfect Summer Sandwich: Chipotle Chicken Salad



Tomorrow we're spending the day at the beach, so I thought it would be the perfect opportunity to make some fresh summer sandwiches for our lunch. Here is my own recipe for Chipotle Chicken Salad Sandwiches.


 What you'll need:
- Boneless chicken breast, cut into small pieces
(or, you can also buy precooked & pre-grilled chicken strips to save time)
- Aurora bread crumbs (I used Italian Style with Romano Cheese, for added flavour)
- Mayonaise
- Chipotle Southwest sauce
- Green onions and or celery, chopped up into small pieces
- Pepper, and Herbes de Provence (optional)
- Lettuce
- Olive oil
- Milk

Directions:
1. Dip the pieces of chicken into a bowl of cold white milk, then into a bowl of the bread crumbs. Cover the chicken pieces completely in bread crumbs.
2. Throw the pieces of chicken onto heated skillet with olive oil. Fry until golden brown.
3. Once the chicken is done frying, place the chicken into a mixing bowl, along with your desired amount of the mayonnaise and Chipotle sauce. Throw in the chopped onions and or celery.
4. You can also add spices like pepper, herbes de Provence, basil, etc.
5. Mix it all up, until the chicken is evenly covered in the dressing.
Once your chicken salad is finished, you can put it in between your favourite bread (buns, fresh loaf, etc.), and throw in some fresh green lettuce. 

WAY tastier than your average bologna sandwich!

Chocolate and Walnut covered Strawberries.


Add some crushed walnuts to your chocolate covered strawberries.  Arrange them on a colorful plate and enjoy!

Raspberry & Blueberry Cobbler



 Toss 3 cups of frozen raspberries and 3 cups of frozen blueberries and 1/4 cup of sugar in a long glass baking dish.
Dot with 2 tablespoons of butter.  Heat overn to 425 F.

Biscuit Dough:

2 cups of flour                                             6 tablespoons of butter
3 tablespoons of sugar                                 3/4 cup of milk (or cream)
2 1/2 tsp. of baking powder                                 (do not roll)
1/4 tsp. of salt

Break off tablespoons of dough and drop them on top of the fruit, leaving small spaces between.  Sprinkle dough with 1 tablespoon of sugar.  Bake 15 mins. Reduce heat to 350 F and bake 30 minutes more, until fruit is bubbling and crust is golden.  Let cool about 30 minutes.  Serve warm with vanilla ice-cream.

*  This is a personal favourite dessert of ours.  We often make it for our guests.  It's delicious.

Grilled Zucchini and Tomatoes on BBQ

Today, we decided to add some pizzazz to regular veggies.  This is what we did:

2 zucchinis cut length wise
2 tomatoes cut in quarters
1 small onion cut whatever way you like

 Put in a glass plate.

Vinaigrette:  Olive oil, pepper, herbes de provences, a bit of salt.  Put vinaigrette on veggies and mix everything up.  Put in an aluminum foil and grill on the BBQ.  Tada!!!!!

We ate these delicious veggies with pork chops grilled on the BBQ.
